Banana Buckwheat Muffins

May is Celiac Awareness Month so we're sharing one of our recipes using gluten free flour that everyone can enjoy. The mild nutty flavour from the gluten free flours is a great combination with banana. These muffins are a popular choice for breakfast or snack. Buckwheat is one of the healthiest foods due to the presence of rutin, a flavonoid with antioxidant properties.

Ingredients
  1. ¼ cup Brown Rice Flour
  2. 2 eggs
  3. 1 cup Amaranth Flour
  4. ¼ cup vegetable oil
  5. 1 cup Buckwheat Flakes
  6. ¼ cup milk
  7. ½ cup sugar
  8. 1 cup mashed ripe bananas (approx. 4 bananas)
  9. 2 tsp baking powder
  10. 1 tsp baking soda
Instructions
  1. Preheat oven to 400 degrees Fahrenheit.
  2. In mixing bowl, add all dry ingredients and stir.
  3. In a separate bowl, mix all wet ingredients including bananas and stir until combined.
  4. Make well in dry ingredients and add contents of the bowl with wet ingredients. Fold in and stir until just mixed.
  5. Place paper cups in muffin tin and fill with mixture until ¾ full.
  6. Bake for 20 – 25 minutes. Take out of oven and let cool on rack.

Fall Farro Salad
Serves 6
Instructions geared for ages 8 & up Farro is a grain which is similar to pearl barley it has a nutty flavour and a spongy fluffy texture when it is cooked. Its great for hot or cold salads and is packed with fibre!

Ingredients
  1. 1 ½ cups dry farro
  2. water
  3. 4 carrots chopped
  4. 1 onion diced
  5. 1 zucchini diced
  6. 1 cup Brussels sprouts quartered
  7. 1 cup bell peppers diced
  8. 1 tsp dried thyme
  9. ¼ cup of oil
  10. Cranberries or diced dates
  11. Honey
  12. ¼ cup walnut pieces
  13. Salt and pepper to taste
Instructions
  1. (Parents or older children) Preheat oven to 400°F.
  2. (Parents or older children) Combine the farro and water in a medium saucepan over medium-high heat. Bring the water to a boil, then reduce the heat so the liquid is barely bubbling; cover and cook for 20 minutes. Remove from the heat; drain any excess water, cover and let stand for at least 10 minutes or until it cools to room temperature.
  3. (Parents or older children) Cut vegetables according to instructions above.
  4. Have child(ren) place carrots, onions, and Brussels sprouts on baking sheet and drizzle with oil. Season with spices, and salt and pepper.
  5. (Parents or older children) Place baking sheet in the preheated oven.
  6. Once carrots, and Brussels sprouts are tender have child(ren) add dried fruit, zucchini, peppers to the baking sheet and drizzle with a small amount of honey and have adult or older child(ren) place back in the oven for 5-10 minutes.
  7. Have child(ren) sprinkle with walnuts for garnish and serve warm or cold.
Tips
  1. This recipe can be made ahead of time and kept in the fridge for up to a week so it’s ready to go for those busy nights. Try changing up the flavour by adding different fruits and vegetables into the mix. Try goat cheese, or blue cheese too! One of my favourites is pear and crumbled blue cheese with walnuts!
