Bison Meatballs with Blueberry Compote

Berries are packed with nutrients and incredibly versatile to top savory or sweet dishes. Serve meatballs with our blueberry compote to showcase local ingredients of the prairie provinces.

Ingredients
  1. 1 slice bread, crumbed
  2. 1/4 cup milk
  3. 1/4 cup onion, chopped
  4. 2 pounds of ground bison
  5. 2 cloves garlic, minced
  6. 1 apple, cubed with skin on
  7. 1/4 cup parsley, chopped
  8. Salt and pepper
  9. 1 Tbsp Sharples Ranch Smoky BBQ Rub (available at Silk Road Spice Merchant)
  10. Grapeseed oil
For Compote
  1. 1 cup fresh blueberries
  2. 4 Tbsp honey
  3. 1/4 cup balsamic vinegar (We used Wild Blueberry Balsamic Vinegar from Soffritto)
  4. fresh mint (optional)
  5. 1/2 tsp vanilla
For Meatballs
  1. Soak bread in milk for 5 minutes.
  2. Mix in remaining ingredients. Overmixing will cause meat to toughen. Roll meat into 2 inch meatballs.
  3. Heat cast iron pan to medium-high heat. Add a small amount of oil to coat the bottom of pan. Once pan is hot, place meatballs and turn meatballs to brown on all sides. Then cover to allow meatballs to finish cooking.
For Compote
  1. Combine the honey and balsamic in a small pot and simmer over medium heat for 15-20 minutes until thickened slightly.
  2. Add the blueberries and gently mix to coat the berries with the balsamic reduction. Serve warm.
Notes
  1. Use a scoop to form meatballs into same size for consistent cooking time.

Bison is a very lean meat and an excellent source of protein and iron. It is a great way to add variety to the kinds of proteins you choose and of course, celebrate Canada's 150th birthday with a local food.

Ingredients
  1. 1lb ground bison
  2. 2 tablespoon fresh sage, chopped
  3. 1 teaspoon garlic powder
  4. 1 teaspoon onion powder
  5. salt and pepper, to taste
  6. 1­2 tablespoons choice of fat (we used bacon fat)
Instructions
  1. Mix your burger ingredients together in a bowl.
  2. Make burger patties and place burgers in a skillet under medium heat with your choice of fat or grill on the BBQ. We cooked 5-6 strips of bacon to top of burgers in the skillet first then used the bacon fat to cook the burgers.
  3. Cook on both sides for about 5­-8 minutes or until cooked to preference.

The term tagine refers to a Moroccan clay or ceramic dish, it also can mean a rich stew with meat dish with fruit and vegetables that are slow cooked.

Ingredients
  1. Ingredients
  2. 1½ tbsp grated ginger
  3. 1 tbsp garlic or onion powder
  4. 1 tbsp cumin
  5. 2 tsp ground cinnamon
  6. 2 ½ lbs bison chuck, cut into cubes
  7. 2 red onions diced
  8. 3 tbsp vegetable oil
  9. 3 garlic cloves minced
  10. 2 tbsp tomato paste
  11. 2 cups carrots chopped
  12. 4 celery stalks chopped
  13. ¼ cup dried apricots cut in half
  14. ¼ cup silvered almonds
  15. 1 liter beef stock
  16. 1 tbsp honey
  17. 1 bay leaf
  18. Salt and pepper to taste
  19. 2 tbsp parsley chopped optional garnish
Instructions
  1. Heat a medium sized saucepan with vegetable oil.
  2. In a bowl mix salt, black pepper, paprika, ginger, garlic or onion powder, turmeric, and cinnamon and rub into the meat.
  3. Once pan is hot carefully add meat, onion and sear the meat.
  4. Once meat is rich brown colour add garlic and deglaze pan with beef stock.
  5. Add all remaining ingredients except chopped parsley and let simmer for approximately 1-2 hours until meat is tender stirring occasionally.
  6. Serve with brown rice or whole wheat couscous and garnish with chopped parsley.
Notes
  1. This dish freezes well it can be frozen up to 2 months.

Ingredients
  1. 500 g cubed beef
  2. 1/2 cup diced onion
  3. 1/2 cup sliced carrots
  4. 1/2 cup sliced celery
  5. 1/2 cup sliced parsnip
  6. 1 cup chopped cauliflower
  7. 2 tbs canola oil
  8. 2 tbs flour
  9. 2 tbs tomato paste
  10. 2 cups water or beef stock
  11. 1 tsp paprika
  12. salt and pepper to taste
Instructions
  1. Have the child(ren) collect and measure out the ingredients and check them off on the list to make sure all the ingredients have been collected.
  2. Once all ingredients are collected have the children wash all the vegetables, peel the carrots, and open the can of tomato paste.
  3. (Parents or older children) Add oil to pot on high heat. Add onions and beef and stir until beef pieces are browned.
  4. Add flour and stir until beef is coated with the flour.
  5. Have the children mix in water or beef stock and stir frequently until all the flour has been mixed in.
  6. Carefully have the children supervised by an adult add carrots, celery, parsnips, tomato paste and seasoning and mix together. Sauté over medium heat for 10 minutes.
  7. Carefully have the children supervised by an adult add the cauliflower, stir, cover and simmer for additional 20 minutes or until vegetables are tender.
Notes
  1. TIP: Stewing cut of beef is an excellent choice to use for this dish. It does however, require a longer braising time (about 1.5 hours). If you don’t have that much time, use a higher quality cut of beef, likely sirloin that will do well in a short amount of time to give it a quick sear and stew.
